摘要：【中文】本发明涉及食品检测技术领域，具体是一种水产品中游离氨基酸总量的测定方法，采用三氯乙酸作为提取剂，提取液中的游离氨基酸在弱酸性条件下与茚三酮发生显色反应，生成蓝紫色络合物，用紫外分光光度法进行定量测定。本发明优点在于：一是首次提供了一种比色法测定沙虫干中游离氨基酸总量的方法；二是采用三氯乙酸作为提取液，不但提高了提取效率，还有效的去除了水溶性蛋白的干扰；三是该方法具有操作简便、可重复性高、稳定性好，可直观的得出水产品中游离氨基酸的总量等优点。 【EN】The invention relates to the technical field of food detection, in particular to a method for measuring the total amount of free amino acids in aquatic products.
