摘要:【中文】本发明公开了一种虾蟹壳制备肉类保鲜膜的方法,其解决现有壳聚糖保鲜膜存在保鲜效果不理想的问题。其包括以下步骤:(1)原料预处理:S1、甲壳素纳米颗粒制备;S2、无花果乳液制备;(2)混料;(3)脱气;(4)制膜。具体地,本发明将虾蟹壳通过水热处理,改性虾蟹壳中甲壳素,水热修饰氨基,利用超声波将甲壳素外的杂质剥离,与聚磷酸盐的交联制备甲壳素抗菌纳米离子,结合无花果乳液,联合醋酸和甘油,经均质化交联反应,利用薄膜吹塑或膜液流延技术制成薄膜,干燥获得产品。本发明材料均采自天然原料,制得的肉类保鲜膜安全、绿色,其包装性能优良,自身的抗菌性良好,有效保证抗菌效果和货架期。 【EN】The invention discloses a method for preparing a meat preservative film by using shrimp and crab shells, which solves the problem that the existing chitosan preservative film has an unsatisfactory preservative effect.
